Is there a good tutorial for SF Symbols?

I do not understand the exported templates at all. How does one know what part of the path is filled with black, what part is filled white and what part is transparent? (I get that you can add layers but the exported templates contain only one layer per symbol.)

In the attached screenshot, all black lines are sub-paths of one single path. Neither Affinity (Designer) nor Inkscape give me any hint on what subpaths are drawn how.
